Micro-endemic Cuishe agave, also called Madrecuishe (it thrives in dry climates and typically grows in a tall, cylindrical shape), has leaves up to 3/4 of their final height of around 12 feet, and leaves turn inwards to capture more water.
It takes about 12 to 15 years to mature. Once it is ready, it is cooked in an open-fired oven, giving it a fine, smokey taste.
Production is limited each year, and this boutique mezcal has an amazing taste.
On the palate, it provides citrus and acidic flavors with a balanced herbacous freshness and notes of moist earth with a long permanence on the palate.
